The rare, white, transparent, and impressive fresh somen noodles are made from a blend of Kitaakari and Haruyutaka wheat grown in Hokkaido. The ever-popular “Tori-Tsukemen” is served in a tsukemoto (dipping sauce) with just the right amount of yuzu (citrus fruit) flavor. The restaurant’s rice bowls are made with rice produced in Iwamizawa, and the rice is glossy, fluffy, and sweet.
